What: Learn to make 3 farm-fresh courses with Kendal Duque

Chef Kendal Duque will host a cooking class series that is based on his shopping voyages at the Green City Market. On four Wednesdays (June 15, July 13, August 17 and September 14), Duque will take inspiration from the farmer’s offerings that morning and then create a three course menu for an evening cooking class. Some of June’s dishes will include wild greens, such as arugula and watercress, along with baby carrots, string beans, zucchini and cherries.
At 6 p.m., class participants will gather at The Chicago Firehouse. While watching demonstrations on how to prepare an appetizer, entrée and dessert with seasonal, farm-fresh ingredients, student will enjoy beer and wine beverages and menu tastings. Each guest will receive recipe cards to take home and a special “restaurant industry discount” at the Green Acres and Seedling Farms stands at Green City Market the following Saturday. This unique arrangement will give the cooking class participants the restaurant rate (when they simply mention The Chicago Firehouse class).
Each course will be completely different, based on the seasonality of ingredients. The costs to participate is $60. Please call The Chicago Firehouse to save a place in one or more of the Green City Market-themed cooking classes.
